We buy from farms we have actually visited. Small lots, named growers.

One 3kg drum, every Tuesday, roasted to the bean and not to a schedule.

Ratio	15 g coffee : 250 g water
Grind	medium, like coarse sea salt
Water	92°C, off the boil a minute
Time	2:30 to 3:00 total
